More than happy to share Mark, this particular method uses a La Caja China roasting box, you have one of those handy?

If not I'll dredge up an oven method.

Don't have one of those but looked them up and checked their recipes but no mention of crispy pork belly.

Went to Christopher's in Coupeville today.  They specialize in local Whidbey seafood and was truly amazing!
Needless to say we had leftovers to take home!
Highly recommend this place.

Yeah I adapted, same principal just less time. 

I'll find & post a recipe for one done in the oven, almost as good.
