   Nice-sized fish Croaker.  It's just a quess, but I'd bet those smaller guys must be a bit better eating than some of those monsters we often see.  Looked like a nice day to be out.  Have fun.

I barbecued halibut steaks last night, but messed them up. I over-cooked them.

Any body have any good tips, recommendations, or recipes for California Halibut ? Brine? Marinade?

What you see here on my sink is half of the filets after splitting the catch. We had a lot of good quality Halibut.

Haha. My Grandfather was Irish, from the East Coast. He had a "saying' for everything. They usually had two meanings.

California Halibut are actually Flounder. They don't grow much more than 60#.

Not sure how accurate ?  Rapala spring scale. It was really thick.

It was too heavy for me to hold out close to the camera.

California Halibut are tricky to cook just right. Very easy to overcook. I'm still learning.  :facepalm:

Nope. More like 36 inches. But four or five inches thick. I can easily lift 25 pounds. This one was difficult to lift for the pic.

I have had some with worms in the past. Now I gut them quickly and I think that prevents the worms migrating from the gut and into the flesh.

There were no visible worms in the flesh. There were external parasites clinging to the underside of both fish. (See photo)

I cook mine mostly breaded and fried or on a pan not breaded. Cook it a minute or two less long than you think you need to. If you freeze it first they make excellent crudo. Here's some pics for inspiration.
